This is the recipe I’ve been using for years for Paprikash. (a.k.a. Paprikás Csirke / paprika hendl) In respose to the current hype, I figured I’d share it with you all. Makes 6 servings.

Ingredients

Oil, butter or lard – 2 tablespoons

Chicken thighs, deboned & skin-on – 2 ½ to 3 pounds

Onions, thinly sliced – 2 (or 3 if small)

Hungarian sweet paprika – ¼ cup

Korean chili flakes – 2 teaspoons

Pastry flour – 2 tablespoons

Poultry stock, unsalted – 1 ½ cups

Red bell peppers, diced – 2

Salt and pepper – to taste

Sour cream – 1 cup

Lemon juice (optional) – 1 tablespoon

Directions

Heat the oil over medium-high flame in a large cast iron skillet. Add the chicken skin-side down and brown until skin is crispy, about 7 minutes. Remove to a board, and cut into bite-size pieces.

Remove any excess oil leaving about 2 tablespoons and add the onions. Sauté the onions until wilted and beginning to brown. Stir in the paprika and flour and cook for 1 to 2 minutes.

Whisk in the stock in portions, breaking up any lumps. Add the browned chicken pieces, bell peppers. and the salt and pepper. Bring to a boil, then reduce heat to low, cover and simmer for 25 to 30 minutes, or until the chicken is cooked through and tender.

Stir in the sour cream and lemon juice if using. Adjust seasoning and reheat over low flame. Serve hot with noodles or gnocchi.

Variations

Mushrooms can be added with the stock.

Kosher version: Instead of sour cream, use 50% more flour and 33% more lemon juice. For passover use potato starch instead of flour.

help a trans boy safely move

hi guys so as some of you might know i left an abusive and toxic environment to stay somewhere safer. i am an 18 year old trans boy that has been struggling with bpd, anxiety, panic disorder, and severe depression, all of which have worsened under the care of my abusive and manipulative mother.

a few days ago i got the opportunity to get away from that environment and took it, which has already had a huge positive impact on my mental health and well being. i was closeted from my transphobic mother and now that i’m away, i finally have had the opportunity to come out to my peers with a new school, job, and life. right now i am living with my wonderful boyfriend, jeremy, who is also trans and mentally ill. because i chose to leave suddenly, up until i can completely transfer jobs we are relying solely on commissions to provide us with food, internet, and the transportation needed from day to day. getting to and from the school, the grocery store, and even the post office adds on costs that we are struggling to pay with that we need to make sure i am able to complete highschool here. my mom still has control over my bank account and uses it as leverage against me. right now i have $4.98 to my name and am asking for help to make this new step possible for me. any donation, no matter how small, could help make sure we are able to eat, enroll me in highschool, and keep me away from being forced back into living with my mother.

I keep thinking about the fact that

White diamond believed she was off color or imperfect because she was Blushing- showing emotions or feelings. The reason her controlees were completely white and had no facial expressions or lively movements was because she believed those were irregular and therefore Imperfect. She couldn’t comprehend that anything beyond what is exact and pristine is still perfect in its own way.

Blue and yellow were not perfect like her because to her, they had too many emotions or connections (yellow to blue, and blue to pink) that brought on their weakness.

She doesn’t even realize that it was possible for her to BE imperfect until Steven threw off her plans and actually was able to easily brush off her powers- she felt embarrassement and confusion, which was why she blushed. She recognized it as being off color, but Steven begins to show her that she needs to get out of her head, and feel, experience, see things for the way they are and the way they should make her feel.

Look at how proud yellow is of herself for making blue laugh- white is observing the interaction and actually begins to let herself feel happy and proud too. Maybe this happiness is a “perfection” as well.
